The thick one (nut) is for longer screws, or for replacing a broken plate. The thin one (washer) is for enlarging the contact surface of a mount, better grip, or scratch protection. It also has an inner thread, to make it stay in place better, but it can be a bit harder to screw on. I made the thin version by cutting the thick one. Maybe redoing it, and perhaps fine-tuning the thread start might help improving it. I've printed it in PETG and PLA, but it should work for other materials, too.
